## When you would use Putting Up: The Complete Canning, Storage & Organization Kit

The garden goes sideways in the best way. Forty pounds of green beans in eleven days, a bushel of peaches from the orchard down the road, and a neighbor who keeps leaving zucchini on the porch like a threat. Last season that was a problem. This season it is a Saturday.

The pressure canner comes out for the beans, because low-acid food is its job and not the water bath's. While the gauge holds ten pounds, the food mill turns the seconds-bin peaches into sauce, the water bath loads for the peach halves, and the dehydrator is three trays into the zucchini nobody asked for. By four o'clock the counter is a landing strip of jars — labeled with the date, boxed into crates so nothing chips, rotated onto the shelving with the new stock to the back. ## How we selected the items

We built this for the person who already did a season of jam and pickles and hit the wall: the water bath cannot do vegetables or meat, and that is where most home canners stop. So the pressure canner anchors this kit, and everything else exists to remove the next bottleneck.

## Safe processing — the line that matters

Both canners are in this box because they do genuinely different jobs, and the difference is not a preference.

**Water bath** processing is for **high-acid** foods only: jams, jellies, pickles, fruit, and tomatoes acidified with the citric acid included here. **Pressure canning** is the only safe method for **low-acid** foods — vegetables, meat, poultry, and seafood — because only a pressure canner reaches the temperature that destroys botulism spores. Acidifying a low-acid food does not make it water-bath safe.

Vacuum sealing and dehydrating preserve food too, but neither applies heat processing, so neither one makes a low-acid food shelf-stable on its own. Work from the tested recipes in the included reference, and have your pressure canner's dial gauge accuracy-tested periodically — most county extension offices do it, usually free, and it is worth booking before the season rather than during it.
